I love keeping this creamy Greek sauce on hand to serve with veggies, meat, falafel,
pita chips, etc.

Ingredients

  • 1 large English cucumber peeled with stripes and cut in half
  • 1 teaspoon salt divided
  • 4 garlic coves minced
  • 1 teaspoon white vinegar
  • 1 tablespoon olive oil
  • 2 cups plain greek yogurt
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon fresh dill chopped

Instructions

  • Peel the cucumber, add chunks to a food processor and blend until finely chopped. Sprinkle 1/2 teaspoon of salt over the processed cucumber and let rest for about 15 minutes.
  • Spoon the cucumber mixture into a piece of cheesecloth and squeeze out water.
  • Add cucumber mixture and remaining ingredients to a bowl and mix. Cover and refrigerate for at least 30 minutes before serving. Use within 4 days.
