Peel the cucumber, add chunks to a food processor and blend until finely chopped. Sprinkle 1/2 teaspoon of salt over the processed cucumber and let rest for about 15 minutes.
Spoon the cucumber mixture into a piece of cheesecloth and squeeze out water.
Add cucumber mixture and remaining ingredients to a bowl and mix. Cover and refrigerate for at least 30 minutes before serving. Use within 4 days.
