Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion diced
- 2 cloves garlic minced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Kosher salt and freshly ground pepper to taste
- 1 28-ounce can diced tomatoes
- 1 15-ounce can black beans
- 1 4-ounce can diced green chiles
- 1 cup long grain white rice
- 1 cup beef broth
- 2 tablespoons fresh cilantro leaves chopped
- 1-1/2 cups cheddar cheese shredded
Instructions
- Heat olive oil in large skillet, add onion and garlic and cook until onion is soft. Add ground beef and cook until browned.
- Add bell peppers and cook until soft, about 5 minutes.
- Add seasoning, then add tomatoes, chilies, rice and broth.
- Bring to a boil, reduce to low. Cover and simmer for 25 minutes.
- Turn off heat, add cilantro and cheese, cover for 2 minutes until cheese melts and serve.
