Sloppy José
This is a quick one-pot meal with a Mexican flair, great for a busy day dinner.
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion diced
- 2 cloves garlic minced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Kosher salt and freshly ground pepper to taste
- 1 28-ounce can diced tomatoes
- 1 15-ounce can black beans
- 1 4-ounce can diced green chiles
- 1 cup long grain white rice
- 1 cup beef broth
- 2 tablespoons fresh cilantro leaves chopped
- 1-1/2 cups cheddar cheese shredded
Heat olive oil in large skillet, add onion and garlic and cook until onion is soft. Add ground beef and cook until browned.
Add bell peppers and cook until soft, about 5 minutes.
Add seasoning, then add tomatoes, chilies, rice and broth.
Bring to a boil, reduce to low. Cover and simmer for 25 minutes.
Turn off heat, add cilantro and cheese, cover for 2 minutes until cheese melts and serve.
