Easy Baked Beans

These easy baked beans came together quickly. This can be made with almost any white bean. I commonly use navy, great northern or small white beans (used great northern). I made minor adjustments to Madeline’s original handwritten recipe.

Ingredients

  • 4 slices bacon
  • 1/2 medium onion chopped
  • 2 15-ounce cans great northern beans drained
  • 3 tablespoons brown sugar
  • 1/2 tablespoon molasses
  • 1 tablespoon worcestershire
  • 1 teaspoon dijon mustard
  • 1/4 cup water if needed

Instructions

  • Preheat oven to 325°F
  • In a cast iron skillet, cook bacon until grease releases and starts to lightly brown, Remove from pan, add chopped onion to the same pan and cook in bacon grease until soft.
  • Chop bacon into bite size pieces.
  •  In a small dutch oven or casserole dish, add all ingredients and combine well.
  • Place in the oven and cook uncovered for 90 minutes, stirring occasionally. If mixture becomes too dry, add a little water.
