Preheat oven to 325°F
In a small Dutch oven, cook bacon until grease releases and starts to lightly brown, Remove from pan, add chopped onion to the same pan and cook in bacon grease until soft.
Chop bacon into bite size pieces.
Add all ingredients including chopped bacon to the Dutch oven and combine well.
Place in the oven and cook covered for 30 minutes, uncover for another 60 minutes, stirring occasionally. If mixture becomes too dry, add a little water.
