Cuban Black Beans
I haven’t had a chance to try this recipe yet, but wanted to keep to make in the very near future.
Cuban Black Beans
Ingredients
- 1 pound dried black beans
- 2 tablespoons avocado oil
- 1 yellow onion chopped
- 2 cloves garlic minced
- 1 green bell pepper seeded and chopped
- 1 red bell pepper seeded and chopped
- 1 yellow bell pepper seeded and chopped
- 1 smoked ham hock 8 ounces
- 2 cups low-sodium chicken broth
- 1 cup water
- 2 teaspoons ground cumin
- 2 teaspoons fresh oregano chopped
- salt
- fresh ground pepper
Instructions
- Inspect and discard any damaged beans. Rinse under cold running water. Place beans in a large bowl, add enough tepid water to cover 2 inches above beans. Soak at room temperature overnight. Drain and rise the beans in the morning.
- Preheat oven to 350 degrees F
- On the stovetop warm the oil in a 2-quart dutch oven. Add onion, garlic and bell peppers, and saute until softened but not browned (about 5 minutes).
- Add beans, ham hock, broth, water, cumin, oregano, salt and pepper and stir well.
- Place covered dutch oven in preheated oven for 2 hours.
- Remove the ham hock and let cool. Remove any lean meat, discarding any skin, fat and bones. Stir the meat into the beans.
