Cowboy Beans

Homemade smoked bacon is a staple at our house, but we find that there’s a lot of awkward end pieces left over. We decided to chop these pieces for baked beans, which works perfect. If you don’t have large bacon pieces, just use thick sliced bacon and chop. We also use our homemade basic barbeque sauce for this recipe, but you can substitute your favorite store bought sauce.

Cowboy Beans

These baked beans are a variation of the our standard recipe by using barbeque sauce, Guinness beer and smoked bacon.

Ingredients

  • 5 ounces bacon chopped
  • 1 medium onion chopped
  • 1 1/2 cups barbeque sauce
  • 1 cup Guinness beer
  • 3 tablespoons dark brown sugar packed
  • 2 tablespoons molasses
  • 3 tablespoons Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon canned chipotle chilies puréed
  • 2 16-ounce cans kidney beans
  • 2 16-ounce cans pinto beans
  • 2 16-ounce cans great northern beans

Instructions

  • Preheat oven to 350°F
  • In a dutch oven over medium heat, cook bacon for a couple of minutes until lightly browned.
  • Add chopped onion and cook until soft and bacon has finished browning.
  • Add the next 8 ingredients through the chilies to the pan and stir until blended well.
  • Turn off heat and add beans, stir well and transfer Dutch oven to preheated oven.Bake uncovered for 1 hour. Sauce should be thickened slightly, cool for 10 minutes and serve.
