Cowboy Beans
These baked beans are a variation of the our standard recipe by using barbeque sauce, Guinness beer and smoked bacon.
- 5 ounces bacon chopped
- 1 medium onion chopped
- 1 1/2 cups barbeque sauce
- 1 cup Guinness beer
- 3 tablespoons dark brown sugar packed
- 2 tablespoons molasses
- 3 tablespoons Dijon mustard
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon canned chipotle chilies puréed
- 2 16-ounce cans kidney beans
- 2 16-ounce cans pinto beans
- 2 16-ounce cans great northern beans
Preheat oven to 350°F
In a dutch oven over medium heat, cook bacon for a couple of minutes until lightly browned.
Add chopped onion and cook until soft and bacon has finished browning.
Add the next 8 ingredients through the chilies to the pan and stir until blended well.
Turn off heat and add beans, stir well and transfer Dutch oven to preheated oven.Bake uncovered for 1 hour. Sauce should be thickened slightly, cool for 10 minutes and serve.
