This salad serves 30, so it’s great for a crowd or will keep for a couple of days without dressing.

Ingredients

  • 1 head napa cabbage, thinly sliced
  • 1 medium red bell pepper, julienned
  • 1 medium yellow bell pepper, julienned
  • 1 bunch green onions, sliced
  • 1 medium English cucumber, halved and sliced
  • 1 pound Chinese barbeque pork, julienned
  • 1 boneless skinless chicken breast, boiled and shredded

Dressing

  • 4 tablespoons sugar
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/2 cup peanut oil
  • 2 tablespoons sesame oil
  • 4 tablespoons white wine vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon lemon juice

Instructions

  • Combine all salad and toss.
  • Add dressing and toss well.
  • Top with sesame seeds and cilantro leaves (optional).
  • Keep dressing on the side if not consumed immediately.
