Chimichurri Sauce
I love this sauce served on the side with steak, but it’s also great as a cooked coating over potatoes.
Chimichurri Sauce
Ingredients
- 1 cup fresh cilantro
- 1/4 cup red wine vinegar
- 3 cloves garlic roughly chopped
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1 lime juiced
- 2 medium jalapeños seeded and roughly chopped
- 1/2 cup mint leaves
- 1/4 cup olive oil or a little less depending on desired thickness
Instructions
- Add all ingredients to a food processor (except olive oil). While blending, drizzle oil in slowly. Blend until smooth.
- Store in the fridge for up two weeks.
