Chicken Satay

I love Thai food and this dish is served with Thai peanut sauce (or satay sauce), another of my favorites. Rich likes to grill, so this becomes an easy and yummy appetizer or even small meal that the entire family enjoys.

Ingredients

Chicken

  • 1 to 2 pounds chicken thighs cut about 1-inch wide and 3- to 4-inches long.

Marinade

  • 1 cup coconut milk
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon tumeric
  • 1 clove garlic minced
  • 1 tablespoon brown sugar
  • 1 tablespoon canola oil
  • 1 tablespoon soy sauce
  • `1 tablespoon lime juice

Instructions

  • Mix all ingredients in a bowl for marinade.
  • Add chicken pieces to marinade for at least 2 hours and up to 24 hours.
  • Place chicken on skewers and grill until chicken is cooked through (about 4 to 6 minutes for each side).
  • Serve warm with rice and a side of Thai peanut sauce.
