Ingredients

  • 2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/4 cup butter softened
  • 2 large eggs
  • 3 medium mashed bananas about 1 cup
  • 1/2 cup plain low-fat yogurt
  • 1 tsp vanilla

Instructions

  • Combine flour, baking soda, and salt in a medium bowl; stir with a whisk.
  • Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 2-3 minutes).
  • Add the eggs one at a time, beating well after each.
  • Add banana, yogurt, and vanilla to the mixture; beat until blended.
  • Add flour mixture; beat at low speed just until blended.
  • Spoon batter into an 8.5 x 4.5-inch loaf pan lightly coated with vegetable oil.
  • Bake at 350° on the center rack for 1 hour or until a wooden toothpick inserted in center comes out clean.
  • Cool 15 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
