Banana Bread

Ingredients
- 2 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/4 cup butter softened
- 2 large eggs
- 3 medium mashed bananas about 1 cup
- 1/2 cup plain low-fat yogurt
- 1 tsp vanilla
Instructions
- Combine flour, baking soda, and salt in a medium bowl; stir with a whisk.
- Place sugar and butter in a large bowl; beat with a mixer at medium speed until well blended (about 2-3 minutes).
- Add the eggs one at a time, beating well after each.
- Add banana, yogurt, and vanilla to the mixture; beat until blended.
- Add flour mixture; beat at low speed just until blended.
- Spoon batter into an 8.5 x 4.5-inch loaf pan lightly coated with vegetable oil.
- Bake at 350° on the center rack for 1 hour or until a wooden toothpick inserted in center comes out clean.
- Cool 15 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
