
Pepper Relish
During the summer months, I love visiting one of our nearby organic farms, where I pick up a colorful assortment of peppers. The peppers vary in flavors, from mild to spicy. I dice and mix the varieties of peppers together, usually a different mix each week, so each batch ends up with its own unique look and taste.
My relish usually turns out spicy with a little sweetness, thanks to the sugar. We serve this relish on street tacos, hamburgers, hot dogs and a variety of other meats and salads.
Pepper Relish
Ingredients
- 4 cups Seeded and diced peppers assortment
- 1 large yellow onion diced
- 1 cup apple cider vinegar
- 3 cloves garlic diced
- 3/4 cup sugar
- 2 teaspoons yellow mustard seed
Instructions
- Add all ingredients to a medium saucepan.
- Over medium-high heat, bring the mixture to a boil and then reduce heat to low. Simmer for 30 minutes.
- Add the pepper mixture to canning jars and refrigerate.
