Ingredients

  • 1 pound dried black beans
  • 2 tablespoons avocado oil
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 1 green bell pepper seeded and chopped
  • 1 red bell pepper seeded and chopped
  • 1 yellow bell pepper seeded and chopped
  • 1 smoked ham hock 8 ounces
  • 2 cups low-sodium chicken broth
  • 1 cup water
  • 2 teaspoons ground cumin
  • 2 teaspoons fresh oregano chopped
  • salt
  • fresh ground pepper

Instructions

  • Inspect and discard any damaged beans. Rinse under cold running water. Place beans in a large bowl, add enough tepid water to cover 2 inches above beans. Soak at room temperature overnight. Drain and rise the beans in the morning.
  • Preheat oven to 350 degrees F
  • On the stovetop warm the oil in a 2-quart dutch oven. Add onion, garlic and bell peppers, and saute until softened but not browned (about 5 minutes).
  • Add beans, ham hock, broth, water, cumin, oregano, salt and pepper and stir well.  
  • Place covered dutch oven in preheated oven for 2 hours.
  • Remove the ham hock and let cool. Remove any lean meat, discarding any skin, fat and bones. Stir the meat into the beans.
