No Bean Chili
We have adopted the Keto diet (most of the time), so I developed this great chili recipe. The veggies and spice more than make up for no beans!
No Bean Chili

Ingredients
- 2 tablespoons olive oil
- 1 large oinion diced
- 1 large carrot chopped
- 1 large red bell pepper diced
- 2 large celery stalks sliced
- 2 medium jalapeño peppers seeded and sliced
- 2 large garlic cloves minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 pounds ground beef
- 1 14-ounce can fire roasted diced tomatoes
- 1 28-ounce can crushed tomatoes
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 tablespoons siracha
Instructions
- in a large skillet over medium-high heat add oil and onions, let onions cook for about 5 minutes.
- Add bell pepper, celery and carrots. Cook for an additional 5 minutes.
- Add jalapeño and garlic, cook for 2 additional minutes.
- Add spices and mix well.
- Add ground beef and cook until cooked through, then add the remaining ingredients.
- Bring to a boil and then simmer for 30 minutes uncovered.
- Add salt and pepper to taste.
