No Bean Chili

Top this Keto friendly chili with your choice of grated cheddar cheese, green onions and/or sour cream.

Ingredients

  • 2 tablespoons olive oil
  • 1 large oinion diced
  • 1 large carrot chopped
  • 1 large red bell pepper diced
  • 2 large celery stalks sliced
  • 2 medium jalapeño peppers seeded and sliced
  • 2 large garlic cloves minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 pounds ground beef
  • 1 14-ounce can fire roasted diced tomatoes
  • 1 28-ounce can crushed tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons siracha

Instructions

  • in a large skillet over medium-high heat add oil and onions, let onions cook for about 5 minutes.
  • Add bell pepper, celery and carrots. Cook for an additional 5 minutes.
  • Add jalapeño and garlic, cook for 2 additional minutes.
  • Add spices and mix well.
  • Add ground beef and cook until cooked through, then add the remaining ingredients.
  • Bring to a boil and then simmer for 30 minutes uncovered.
  • Add salt and pepper to taste.
