Chinese Chicken Salad
This salad serves 30, so it’s great for a crowd or will keep for a couple of days without dressing.

Ingredients
- 1 head napa cabbage, thinly sliced
- 1 medium red bell pepper, julienned
- 1 medium yellow bell pepper, julienned
- 1 bunch green onions, sliced
- 1 medium English cucumber, halved and sliced
- 1 pound Chinese barbeque pork, julienned
- 1 boneless skinless chicken breast, boiled and shredded
Dressing
- 4 tablespoons sugar
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/2 cup peanut oil
- 2 tablespoons sesame oil
- 4 tablespoons white wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon lemon juice
Instructions
- Combine all salad and toss.
- Add dressing and toss well.
- Top with sesame seeds and cilantro leaves (optional).
- Keep dressing on the side if not consumed immediately.
