Peanut Butter Kiss Cookies

These cookies are a classic and our kid’s love them. This recipe makes about 70 cookies (they go fast at our house), but if you want to make a smaller batch, just half the recipe. Or you can store extras in the freezer.

Ingredients

  • 1 cup shortening
  • 1 cup creamy peanut butter I use Jiff
  • 1 cup granulated sugar used for cookie mixture
  • 1 cup brown sugar packed
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 4 tablespoons milk
  • 2 teaspoons vanilla
  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar used on outside of cookies
  • 1 bag milk chocolate kisses

Instructions

  • Preheat oven to 350°F.
  • In a mixer bowl beat shortening and peanut butter on medium speed for 30 seconds.
  • Add 1/2 cup granulated sugar, brown sugar, baking powder and baking soda to the mixer bowl. Beat until combined. Blend in egg, milk and vanilla until combined. Add the flour in batches until mixed well.
  • Scoop dough with 1-inch cookie scoop to form balls. Roll balls in the remaining 1/4 cup granulated sugar. Place dough balls 2 inches apart on a cookie sheet. I like to place parchment paper on the cookie sheet or a silicone baking mat to keep the cookies from sticking.
  • Bake for 10 to 12 minutes until they are light brown on the edges. Immediately press chocolate Kiss into the center of each cookie. Transfer to a cooling rack.
