Homemade Pasta

I use the Marcato Atlas Pasta Machine. For lasagna noodles, set at #5. For fettuccine noodles set at #6.

Ingredients

  • 2 cups all-purpose flour
  • 4 large eggs room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil

Instructions

  • Blend all indigents together in a food processor with a dough blade. If the dough feels a little dry, add a little cold water, 1 teaspoon at a time. Consistency should not be too sticky but still form a ball of dough.
  • Remove from food processor and knead on a lightly floured work surface, folding several times until the dough is smooth. Place in a zip lock bag unsealed or loose plastic wrap and let it rest on the counter for at least 20 minutes before working with the dough.
