We like a traditional apple and current bread stuffing for Thanksgiving and Christmas. This recipe is the right amount to stuff a 10-15 pound turkey or 6 game hens. If you have a larger turkey or if you like extra in a baking dish, just double the recipe.

Ingredients

  • 1 cup finely chopped celery
  • 1 cup chopped yellow onion
  • 1 cup butter
  • 1 cup currants
  • 1 cup peeled diced red apples or apple of your choice
  • 1 1/2 teaspoons poultry seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 16 cups dried bread cubes
  • 1 1/2 cups chicken broth or slightly more, if necessary

Instructions

  • In a saucepan, cook celery and onion in butter at medium-low heat until tender but not brown; add currants and apples and simmer on low for 5 minutes; remove from heat and stir in poultry seasoning, salt and pepper.
  • Place the bread cubes in a large mixing bowl. Add the cooked mixture. Drizzle with enough broth to moisten, tossing lightly.
  • Stuff turkey or Cornish game hens and cook according to recipe instructions.
