Deviled Eggs

We color a large batch of Easter eggs each year. After the festivities, I like to make some into deviled eggs. You can eat only so many plain hard boiled eggs! This is my favorite recipe.

Ingredients

  • 6 hard boiled eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • dash Tabasco sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • paprika or bacon bits optional toppers

Instructions

  • Peel and halve eggs, reserving yolks in a bowl. Mash yolks with a fork.
  • Add to the bowl: mayonnaise, Dijon mustard, apple cider vinegar, Tabasco sauce, salt and pepper. Mix until well combined and fill egg halves with the mixture.
  • Sprinkle with optional paprika or bacon bits.
