Chipotle Aioli
We serve this sauce with our Dungeness crab cakes, but you can serve with a variety of dishes. It has just enough spice!
Chipotle Aioli
This sauce tastes best if made a day ahead, but if you're in a hurry, it's still great served the same day. I purée an entire 7-ounce can of chipotle peppers in adobo sauce and store in the refrigerator so that I usually have this ingredient readily available.

Ingredients
- 1/2 cup mayonnaise
- 1 tablespoon fresh squeezed lemon juice about 1/2 lemon
- 1 1/2 tablespoons olive oil
- 3 tablespoons chipotle peppers in adobo sauce puréed
- 1 clove garlic minced (garlic press or zester)
Instructions
- In a small bowl whisk together mayonnaise, lemon juice and olive oil until mixed thoroughly.
- Mix in the remaining ingredients with a spoon. Cover and chill before serving.
- Tastes best if made a day ahead. If you're in a hurry, it's still great served the same day.
