Chicken Soulaki

This is a great Greek chicken recipe that is typically served with pita bread and tzatziki sauce. We typically serve mezze style with several side dishes that everyone can choose from to customize their dish.

Ingredients

  • 2 pounds boneless skinless chicken thighs cut into bite-sized pieces
  • 6 cloves cloves garlic minced
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon fresh mint chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dried dill
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 each fresh juiced lemons

Instructions

  • Add all ingredients into a gallon zip lock bag, toss to combine well. Refrigerate for 2 to 24 hours.
  • Thread chicken pieces onto skewers and cook on the grill, turning often until cooked through. Should be slightly charred and have an internal temperature of at least 160 degrees (about 15 minutes).
  • Serve with grilled veggies, hummus, tzatziki sauce, pita or salad.
