BBQ Meatloaf

This is a spinoff of a classic meatloaf but with barbeque sauce and chili to spice it up. We freeze leftovers for an easy meal during the week.

Ingredients

  • 1 1/2 pounds ground beef
  • 3/4 cup plain dry breadcrumbs
  • 1/2 large onion chopped
  • 1/2 cup BBQ sauce divided
  • 1 tablespoon prepared mustard
  • 1 1/2 teaspoons chili powder
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1 large egg
  • cooking spray

Instructions

  • Preheat oven to 350°F
  • Combine beef, breadcrumbs, onion, 2 tablespoons BBQ sauce, and remaining ingredients (except for the cooking spray) in a large bowl and mix well.
  • Spray a 9x5 loaf pan with cooking spray, add meatloaf mixture and top with remaining BBQ sauce.
  • Bake at 350°F for 1 hour or until meat registers 160°F. Let stand for 10 minutes before slicing.
