This is one of my Mom’s favorite Thai dishes and many Thai restaurants do not serve so,
of course, I had to give it a try. My son even likes spinach now, thanks to the Thai peanut
sauce

Ingredients

  • 2 tablespoons peanut oil
  • 1 chicken breast sliced thin
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 8 cups spinach
  • 2 cups Thai Peanut Sauce

Instructions

  • In a large skillet on medium-high heat add oil to the pan. Add chicken and season with salt and pepper until cooked through.
  • Add spinach and cook until just wilted.
  • Add about one vup of the Thai peanut sauce until lightly coated.
  • Serve over white rice. Serve additional Thai peanut sauce on the side in case anyone wants more sauce.
