Easy Hot Pot Broths
We've been trying out hot pot lately. It's fun for family and friends; everyone can add their favorite meats and veggies for customized servings. It's like an Asian fondue. These are easy and basic recipes but stay tuned, as we experiment more, we hope to add other recipes.

Ingredients
Easy Beef Broth
- 1 teaspoon olive oil
- 1 sweet onion
- 32 ounces beef broth
- 2 tablespoons red curry paste
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
Easy Thai Broth
- 32 ounces vegetable broth
- 2 garlic cloves sliced
- 1/2 piece ginger sliced
- 15 ounces Thai canned coconut milk
- 2 tablespoons red curry paste
Instructions
Easy Hot Pot Beef Broth
- Heat olive oil in a small saute pan and saute onions until soft. Add onions and remaining ingredients to one half of the hot pot. Turn on high until boiling, then reduce and simmer for at least 20 minutes.
- If you use a hot pot without 2 compartments and would like more broth, just double the recipe.
Easy Hot Pot Thai Broth
- Combine all ingredients in hot pot, heat until boiling. Reduce heat and simmer for 20 minutes.
