Homemade Pasta
I use the Marcato Atlas Pasta Machine. For lasagna noodles, set at #5. For fettuccine noodles set at #6.

Ingredients
- 2 cups all-purpose flour
- 4 large eggs room temperature
- 1/2 teaspoon salt
- 1 teaspoon olive oil
Instructions
- Blend all indigents together in a food processor with a dough blade. If the dough feels a little dry, add a little cold water, 1 teaspoon at a time. Consistency should not be too sticky but still form a ball of dough.
- Remove from food processor and knead on a lightly floured work surface, folding several times until the dough is smooth. Place in a zip lock bag unsealed or loose plastic wrap and let it rest on the counter for at least 20 minutes before working with the dough.
