BBQ Meatloaf
This is a spinoff of a classic meatloaf but with barbeque sauce and chili to spice it up. We freeze leftovers for an easy meal during the week.

Ingredients
- 1 1/2 pounds ground beef
- 3/4 cup plain dry breadcrumbs
- 1/2 large onion chopped
- 1/2 cup BBQ sauce divided
- 1 tablespoon prepared mustard
- 1 1/2 teaspoons chili powder
- 2 cloves garlic minced
- 1/2 teaspoon salt
- 1 large egg
- cooking spray
Instructions
- Preheat oven to 350°F
- Combine beef, breadcrumbs, onion, 2 tablespoons BBQ sauce, and remaining ingredients (except for the cooking spray) in a large bowl and mix well.
- Spray a 9x5 loaf pan with cooking spray, add meatloaf mixture and top with remaining BBQ sauce.
- Bake at 350°F for 1 hour or until meat registers 160°F. Let stand for 10 minutes before slicing.
