Use the Philips Pasta Maker with the lasagna attachment. Add 2 cups flour and recommended fluid provided on the machine. We cut ours into squares, about 5"x5".
Filling
Mix pork, garlic, ginger, soy sauce, sherry, sesame oil, salt, pepper, onion and cabbage in a medium bowl until well combined. All ingredients uncooked (cooks in the boiling process below).
Sauce
Mix soy sauce, rice vinegar, sesame oil, Fresno pepper and ground pepper in a small bowl.
Assembly and Cooking
Fill pasta squares with about a teaspoon of filing. Wet your fingers with water and run across all edges. Press to seal in a triangle shape.
Boil water in a pot with a little salt and add sealed pot stickers for 8 minutes. Remove to a drying rack when done. We let them air dry on the rack, then sauté the pot stickers in a cast iron frying pan with a little oil to crisp up a little on both sides.
