Chicken Curry Salad with Grapes
You can serve this salad over a bed of lettuce or it makes a great chicken salad sandwich. If including slivered almonds, you can mix into mixture with grapes, or sprinkle on top as a garnish.
- 4 cups cooked chicken diced or shredded
- 1 cup celery sliced
- 5 stalks green onion sliced
- 1 1/2 cups mayonnaise Best Foods (adjust amount to preference)
- 1/4 teaspoon curry powder more or less to taste (optional)
- 1 cup seedless green or red grapes halved and chilled
- lettuce (optional)
- slivered almonds (optional)
If you use curry powder, mix with mayonnaise.
Combine mayonnaise mixture with chicken, onion and celery in a mixing bowl. Cover and refrigerate for 1 to 5 hours (5 hours is best).
Gently mix in chilled green grapes just before serving. If you prefer the almonds mixed in (instead of sprinkled on top), stir into salad with grapes.
Place on a bed of lettuce (optional) and sprinkle with slivered almonds (optional).
