Soak beans overnight in room temperature water.
Preheat the oven to 300 degrees F.
Combine soaked drained beans with remaining ingredients and 4 cups of water in a dutch oven.
Cook covered for 1 hour then stir, cook for another hour.
Stir again. leaving uncovered to bake for another hour.
Pull from the oven and let sit for 10 minutes covered again and serve.
