MADELINE’S RECIPES

I’ve inherited my aunt’s recipes, so wanted to honor her by cooking each and including on Cafe Rouge. Madeline’s husband is from New Orleans, where she visited many times and developed a love of cajun food. Her favorite New Orleans cookbook is “The New Orleans Cookbook” by Rima and Richard Collin.
